Ingredients

  • 1 head of cauliflower, florets
  • 1 cup raw cashews (for milk), with 3 cups water
  • 1/2 cup raw cashews
  • 3 cups cashew milk
  • 3 cloves garlic minced
  • 1/2 cup nutritional yeast
  • 1/2 medium onion diced
  • 1 14.5 oz can of diced tomatoes drained
  • 1 4 oz can of diced green chili
  • 2 tbsp apple cider vinegar

Spices

  • 2 tsp sea salt
  • 2 tsp mustard powder
  • 1 1/2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp turmeric powder optional, for color

Directions

  1. bake cauliflower to roast/soften
  2. fill blender to 3 cups water
  3. add 1 cup cashews
  4. blend until fully combined
  5. set aside

  6. add oil and garlic powder to pot, cook until bubbles
  7. saute onion and jalapeno
  8. add spices and continue to saute
  9. add diced tomatoes
  10. add cauliflower, mix
  11. continue to saute
  12. add cashew milk
  13. bring to a boil
  14. reduce to simmer, stir frequently until cauliflower is soft

  15. transfer to blender
  16. add nutritional yeast and cashews
  17. blend fully

  18. serve
