This is a super simple recipe for vegan queso, with potatoes as the main source of creaminess.

Ingredients

  • 1 cup boiled, cubed potatoes
  • 1 cup vegetable broth
  • 1 cup unsweetened coconut milk
  • 1 tbsp fresh lemon juice
  • 1 tbsp pickled jalapeno juice
  • 3/4 cup raw cashews
  • 4 cloves garlic
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 cup nutritional yeast
  • 2 tsp salt, to taste
  • 2 teaspoon corn starch, to thicken
  • 1 14.5-oz can diced tomatoes & green chiles, drained

Directions

  1. cube and boil potatoes
  2. add all other ingredients to blender and wait for potatoes to finish boiling
  3. drain can of diced tomatoes & green chiles and set aside
  4. strain and add potatoes to blender
  5. bend until creamy
  6. transfer to pot
  7. add drained tomatoes and green chiles to pot
  8. heat to serving temperature, stirring frequently

  9. serve
