My world famous tofu scramble is best served wrapped in warm flour tortillas!


  • 1 block of firm tofu, pressed and drained
  • 0.25 cup nutritional yeast flakes
  • Black pepper to taste

Spice Blend

  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1 tsp. dried thyme
  • 0.5 tsp. ground turmeric
  • 1 tsp. salt
  • 3 Tbsp. water


  • 2 Tbsp. olive oil
  • 3 cloves garlic, minced


  • 1 cup chopped baby spinach
  • 0.5 cup chopped red peppers
  • 0.5 cup chopped green peppers


  1. Combine spice blend with water in a small cup. Set aside
  2. Cut tofu block up into small chunks about 1.5cm^3 in size
  3. Preheat a large pan over medium high heat
  4. Add Base to pan and saute for about a minute
  5. Pick up tofu with your hands and squish it through your fingers into the pan to add some entropy to the dish
  6. Add red and green pepper mixins
  7. Break up larger pieces of tofu with a fork and stir tofu into Base
  8. Cook for about 10 minutes while occasionally stirring and scraping pan to saute appropriately
  9. Add spice blend
  10. Add nutritional yeast
  11. Add black pepper to taste
  12. Add spinach mixin
  13. Mix to incorporate completely
  14. Add more water if it seems too dry
  15. Cook for about 5 more minutes
